Shrikhand
Yohurt Cream Cheese (Dehin) with sugar

PREPARATION AND COOKING TIME:
YIELD:

  • 6 cups plain yogurt in two layers of cheesecloth and allow to drain 8-12 hours until no more whey appears;
  • Whisk with 1/2-1 cup powdered sugar.

Optional combinations of:

  • 1/4 tsp powdered saffron or 5-6 saffron strands soaked in rose-water.
  • 1/4 tsp ground cardamom (Velchi/elaichi).
  • 2-4 tblsp of crushed pistachio nuts.
  • 1/4 tsp ground nutmeg (Jaiphal).
  • Mixed fruit salad.
  • Top with fruit jam syrup.
