Chenna and Powdered Milk Logs in Cardamom Syrup

PREPARATION AND COOKING TIME:
YIELD:

  • Make Chenna from 1/2 gal milk;
  • Boil syrup for 5 minutes then set aside:
    • 3 cups water;
    • 1 cup sugar;
    • Crused cardamom seeds from 8-10 pods;
  • Bray the fresh chenna for 5 minutes until perfectly smooth;
  • Mix:
    • 1 cup dried milk powder;
    • 1 1/2 tbsp self raising flour;
  • Knead into the chenna;
  • Divide into logs about 2 inches long;
  • After 5 mins the logs will rise to the surface;
  • When golden brown soak for min. 2 hours in syrup. If logs collapse cook for 5 minutes more;
  • Serve warm or at room temperature.
