Goloka Peanut Brittle

PREPARATION AND COOKING TIME:
YIELD:
- Remove skins and partly crush:
- 1/2 cup raw peanuts;
- 1/4 cup cashews;
- 1/4 cup pecans;
- Stir and roast on medium heat for 3-4 minutes in 4 oz (1/4 stick) butter;
- Add and stir constantly:
- 1 cup white sugar;
- 1/4 cup seasame seed or finely grated coconut;
- 1/4 tsp salt;
- 1/8 tsp citric acid;
- As soon as the sugar has melted add 1/8 cup currants;
- Spread thinly onto a buttered pan;
- Break into small pices to serve.
