Misthi Dahi (Sweetened Condensed Yogurt)

PREPARATION AND COOKING TIME:
YIELD:

  • Strain 4 cups un-sweetened kheer;
  • Let cool to 115°F (45°C) (will not burn finger);
  • Add 1/4 cup dahi;
  • Add 3/4 cup jaggery or maple sugar granules;
  • Add saffron or vanilla bean;
  • Cover and keep warm for 6-12 hours;
  • Refrigerate.

Serve chilled with a garnish of grated nutmeg.
