Chic-pea-flour and Dried-fruit Balls

PREPARATION AND COOKING TIME:
YIELD: 24

  • Simmer until it becomes a thick syrup:
    • 3/4 cup sugar;
    • 1 cup water;
    • 1/4 tsp ground nutmeg;
    • 1/4 tsp powdered cloves;
    • 1 cup mixed chopped dried fruit e.g.
      • Dates;
      • Figs;
      • Raisins;
    • 1/2 cup mixed nuts e.g.
      • almonds;
      • cashews,
      • pecans;
      • grated coconut;
  • Make Bundies - chick-pea-flour pearls:
    • Mix until smooth and runny:
      • 3/4 cup chick-pea-flour;
      • 1/2 cup water;
    • Push through holes in colander into 350° ghee;
    • Fry and drain before becoming brown (4-6 mins);
  • Combine bundies and syrup;
  • Moisten hands and form into balls;
  • Refrigerate.
