Khara Gajar Burfi
Carrot Milk Fudge

PREPARATION AND COOKING TIME:
YIELD:

  • Heat 2 tbsp ghee in saucepan;
  • Add and sauté for 2-3 minutes:
    • 2 grated carrots;
    • 1 tsp ground cardamom;
    • 1 tsp freshly grated nutmeg;
  • Add and boil for approx. 8 mins:
    • 1 cup water;
    • 1/2 cup sugar;
  • Remove from heat and cool for 10 mins;
  • Fold in and cook over moderate heat for 4 mins:
    • 1/2 tbls ghee;
    • 1 2/3 cups powdered milk;
  • When thick stir in 1/2 tbsp ghee;
  • Pour into pan and refrigerate.
