Deep-fried Stuffed Banana Balls

PREPARATION AND COOKING TIME:
YIELD:

  • Roast in ghee until brown 1/2 cup of chopped mixed nuts e.g:
    • Almonds;
    • Cashews;
    • Pecans;
  • Add and cook for 1 minute:
    • 1/4 cup chopped raisins;
    • 1/2 tsp groung nutmeg;
    • 1/2 tsp ground cardamom;
  • Set aside to cool;
  • Peel and dice 5 plantains or unripe bananas;
  • Fry in ghee for 5 mins;
  • Add 3/4 cup sugar and cook until thick;
  • Divide into two;
  • Mix one half with nuts and roll into small balls;
  • Coat these balls with the other half;
  • Deep fry balls for a few minutes in hot ghee;
  • Drain and coat with powdered sugar.
