Jelebi

PREPARATION AND COOKING TIME:
YIELD:

  • Combine, cover and keep warm for 1 - 2 days:
    • 1 1/2 cups plain white flour;
    • 1 cup semolina or rice flour;
    • 1/4 tsp baking powder;
    • 2 tbsp yogurt;
    • 1 1/2 cups water;
    • pinch saffron;
  • Boil syrup for 10 mins:
    • 2 cups water;
    • 2 cups sugar;
    • pinch saffron;
    • 1 tbsp rose-water;
  • Heat clean ghee to 355°;
  • Loop batter into hot ghee and turn with slotted spoons after 30 secs, remove after another 30 sec when golden. If they are not golden in 60 seconds ghee needs to be hotter;
  • Place in hot syrup for 15 seconds, drain and place on plate;
  • Serve hot or chilled.
