Dried Fruit Dessert

SOAKING TIME: overnight
PREPARATION TIME: 10 minutes
COOKING TIME: 11/2 to 2 hours
YIELD: 10 portions
All measurements are for unsoaked fruit.

  • Cover with approx. 5 cups water and soak overnight:
    • 1 cup dried prunes;
    • 1 cup raisins;
    • 1 cup whole dried apricots;
    • 1/4 cup sultanas;
    • 1/4 cup currants;
    • 1/4 cup candied orange peel;
    • 4 dried figs, chopped;
  • Simmer with 1 cup sugar for 1 hour over low heat;
  • Add 1 cup chopped mixed nuts;
  • Simmer for a further 1/2 - 1 hour;
  • Refrigerate;
  • Serve with a topping of light cream and garnish of grated nutmeg.
