Burfi

PREPARATION AND COOKING TIME: 50 mins
YIELD: 1 gal = 20-22 sweets

  • Boil 1 gal milk whilst stiring in large heavy pot;
  • Add:
    • 1 cup sugar;
    • Large pinch saffron;
    • (optional) If using bottled milk, add 1/2 pint heavy cream;
  • Towards the end add 1/2 stick (1/8 lb) unsalted butter;
  • Remove from heat when it rolls from bottom of pan;
  • Bray untill smooth;
  • Roll out into a shallow biscuit tray (approx 1/2 in thick);
  • Refrigerate;
  • Cut into squares;
  • Decorate.

 

Sandlewood Burfi

Slice a walnut sized piece of sandlewood and wrap in muslin with a few green cardamon pods. Place in milk as it is being reduced.
